JOURNEY TO THE
ETHIOPIAN HIGHLANDS

Discover the birthplace of coffee and meet the farmers behind our prized Yirgacheffe beans.

By Chill Your Beans 8 min read Yirgacheffe Region

In the misty highlands of southern Ethiopia, where ancient coffee forests still grow wild, a remarkable story unfolds each harvest season. This is Yirgacheffe — a name that has become synonymous with the world's most exquisite coffee, and the place where our journey begins.

Legend has it that coffee was discovered here over a thousand years ago, when a goatherd named Kaldi noticed his goats dancing with unusual energy after eating bright red berries from a certain tree. Today, we partner with the descendants of those original coffee guardians to bring you beans that carry centuries of tradition in every sip.

01
CHAPTER ONE

THE PERFECT TERROIR

The Yirgacheffe region sits at elevations between 1,700 and 2,200 metres above sea level. Here, the combination of rich volcanic soil, consistent rainfall, and cool temperatures creates the perfect conditions for Arabica coffee to develop its signature complexity.

Coffee grows slowly in these highlands, allowing the cherries to develop deep, concentrated flavours. The result is a cup unlike any other — bright with citrus, sweet with jasmine, and eternally unforgettable.

"The altitude here is everything. It's what gives our coffee that brightness, that clarity you can't find anywhere else in the world."

— Local Farmer, Yirgacheffe

CHAPTER TWO

THE COFFEE GUARDIANS

The families who tend these coffee gardens have done so for generations. Knowledge passes from parent to child — when to pick, how to process, which trees produce the sweetest fruit. This isn't industrial agriculture; it's a living tradition.

Most farms in Yirgacheffe are small, typically less than two hectares. Farmers work alongside their families, hand-picking only the ripest cherries during harvest season. This meticulous approach ensures that only the highest quality beans make it into your cup.

FAIR TRADE PARTNERSHIP

We work directly with farming cooperatives, ensuring fair prices that support families and communities. Every bag you buy contributes to better schools, healthcare, and sustainable farming practices.
